Ingredients

  • For the crust:
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • For the brownie layer:
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • For the cheesecake layer:
  • 16 ounces cream cheese, softened
  • 1 cup sour cream
  • 1/2 cup caramel sauce (plus extra for drizzling)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. Mix graham cracker crumbs and melted butter in a bowl. Press into bottom of pan and bake for 10 minutes. Set aside to cool.
  3. In a large bowl, whisk together granulated sugar, brown sugar, flour, cocoa powder, and salt.
  4. Add eggs and vanilla. Mix until just combined, then fold in chocolate chips.
  5. Pour half of the brownie batter over the cooled crust.
  6. In a separate bowl, beat cream cheese until smooth. Add sour cream and caramel sauce and mix until fully combined.
  7. Pour cheesecake mixture over the brownie batter in the pan.
  8. Spoon remaining brownie batter on top.
  9. Bake for 50–60 minutes, or until center is set but slightly jiggly.
  10. Turn off oven, crack the door, and let cool inside for 1 hour.
  11. Cool completely on counter, then refrigerate for at least 4 hours or overnight.
  12. Drizzle with caramel sauce before serving.
