Ingredients

  • 1 cup dates, chopped
  • 1 cup water
  • 1 tablespoon brown sugar
  • 1 teaspoon butter
  • 2 teaspoons cocoa powder
  • 1/4 teaspoon vanilla essence
  • 125 g butter, softened
  • 1/2 cup white sugar
  • 1 large egg
  • 1 3/4 cups plain flour
  • 1 teaspoon baking powder

Instructions

  1. In a saucepan, combine chopped dates, water, brown sugar, butter, and cocoa powder. Cook over low heat, stirring, until thick and smooth. Remove from heat, stir in vanilla essence, and set aside to cool.
  2. Preheat oven to 180°C (350°F). Grease and line a 20 cm square baking tin with baking paper.
  3. Cream butter and sugar together until light and fluffy. Add egg and beat well.
  4. Sift in flour and baking powder, then mix to form a soft dough.
  5. Press half of the dough evenly into the base of the tin.
  6. Spread the cooled date filling evenly over the dough base.
  7. Roll or press remaining dough between two sheets of baking paper into a square. Place over filling and press gently.
  8. Bake for 30 minutes, or until top is lightly golden. Cool in the tin, then cut into finger-sized pieces.
