Ingredients

  • 1 cup unsalted roasted peanuts (or your favorite nuts)
  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/4 cup unsalted butter
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Optional: pinch of cinnamon or sea salt for topping

Instructions

  1. Line a baking sheet with parchment paper or a silicone mat. Set aside.
  2. In a medium saucepan over medium heat, combine sugar and water. Stir until the sugar dissolves, then let it simmer without stirring for 5–7 minutes until it turns deep amber.
  3. Remove from heat and carefully stir in butter, vanilla, and salt until smooth.
  4. Add roasted peanuts and stir quickly to coat evenly in the caramel.
  5. Using a spoon, drop small mounds of the mixture onto the prepared baking sheet. Sprinkle with sea salt or cinnamon if desired.
  6. Let clusters cool at room temperature or refrigerate for 15–20 minutes until firm.
  7. Store in an airtight container at room temperature or refrigerate for a firmer texture.

Notes

  • Use salted peanuts but reduce or omit added salt in the recipe.
  • Don’t stir the sugar mixture once it starts boiling — swirl the pan gently to prevent crystallization.
