Ingredients

  • 200 g digestive biscuits or graham crackers, finely crushed
  • 100 g unsalted butter, melted
  • 400 g full-fat cream cheese, softened
  • 100 g granulated white sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 150 ml sour cream or plain Greek yogurt
  • 45 tablespoons thick caramel sauce (store-bought or homemade)

Instructions

  1. Preheat oven to 170°C (340°F). Line an 8×8-inch square baking tin with parchment paper, leaving an overhang for easy removal.
  2. In a bowl, combine crushed biscuits and melted butter until the texture resembles wet sand. Press firmly and evenly into the prepared tin. Bake for 8–10 minutes until lightly golden, then cool.
  3. In a large mixing bowl, beat cream cheese and sugar until smooth and creamy. Add eggs one at a time, mixing well after each. Stir in vanilla extract and sour cream until fully combined.
  4. Pour the cheesecake mixture over the cooled crust and smooth the top.
  5. Drizzle caramel sauce over the surface and gently swirl with a toothpick or knife to create a marbled effect without overmixing.
  6. Bake for 30–35 minutes, or until the edges are set and the center slightly jiggles when shaken.
  7. Cool completely at room temperature, then refrigerate for at least 3 hours or overnight before slicing into bars.
