Ingredients

  • 2 cups granulated sugar
  • 1/2 cup water
  • 5 medium ripe bananas, thinly sliced (about 3 cups)
  • 1/2 teaspoon salt
  • 1 tablespoon lime juice
  • 1 tablespoon vanilla extract

Instructions

  1. In a large microwave-safe bowl (2-quart Pyrex), combine sugar and water. Stir gently to blend.
  2. Cover tightly with microwave-safe plastic wrap and poke 6–8 holes for venting.
  3. Microwave on high for 10 minutes. Then continue in 2-minute intervals until the mixture turns golden brown, about 14–15 minutes total.
  4. While caramel cooks, slice bananas and place them in a medium-large pot.
  5. Carefully remove the caramel using oven mitts and pour it into the pot with bananas (do not scrape the bowl).
  6. Bring the banana mixture to a gentle boil, then reduce to a low simmer. Cook for 15–20 minutes until thickened and glossy.
  7. Stir in salt. Remove from heat and add lime juice and vanilla extract. Stir to combine.
  8. Cool slightly, transfer to clean jars, and refrigerate. Use within 1 month.
  9. Serve over toast, biscuits, pancakes, yogurt, or warm as a topping for ice cream.
