Ingredients

  • 12 fresh figs, ripe and soft
  • 2 tablespoons ghee or coconut oil
  • 2 tablespoons coconut sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons coconut sugar (for nut topping)
  • 2 tablespoons water (for nut topping)
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon sea salt
  • 1/4 cup raw nuts (almonds, pistachios, or walnuts)

Instructions

  1. Wash and pat dry the figs. Slice each fig in half lengthwise and set aside.
  2. In a large skillet over medium heat, melt the ghee or coconut oil. Add coconut sugar and vanilla extract, stirring gently until sugar dissolves and mixture simmers.
  3. Place fig halves cut side down into the skillet. Cook for 3–4 minutes until golden and caramelized, then flip and cook another 3 minutes.
  4. Transfer figs and remaining sauce to a serving plate. Serve warm or prepare the nut topping.
  5. For the nut topping, clean the skillet or use a small saucepan over medium heat. Add coconut sugar, water, cinnamon, and sea salt. Whisk until bubbling.
  6. Add raw nuts and cook for about 3 minutes, stirring constantly. Remove from heat and let cool for 5 minutes. Separate nuts if needed before serving.

Notes

  • Use ripe, soft figs for best results.
  • Ghee adds richness, but coconut oil keeps it vegan.
  • The nut topping is optional but adds great texture and flavor.
  • Serve with yogurt, toast, or dairy-free ice cream for variation.
  • If caramel thickens, reheat gently with a splash of water.
