Ingredients

  • 500 g cremini or button mushrooms, cleaned and sliced in half
  • 3 tablespoons olive oil
  • 6 cloves garlic, thinly sliced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ¼ teaspoon chili flakes
  • 1 tablespoon unsalted butter
  • 60 g feta cheese, crumbled
  • 40 g walnuts, roughly chopped
  • 3 tablespoons honey
  • ½ teaspoon chili paste or chili powder
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon fresh parsley, finely chopped

Instructions

  1. Heat a large skillet over medium-high heat and add olive oil.
  2. Add mushrooms in a single layer and cook without stirring for 4–5 minutes to develop a deep brown sear.
  3. Stir and cook for another 5 minutes until well caramelized and most moisture has evaporated.
  4. Reduce heat to medium and add garlic, salt, pepper, smoked paprika, and chili flakes. Cook for 1–2 minutes until garlic is golden and fragrant.
  5. Add butter and stir to coat the mushrooms evenly.
  6. In a small bowl, combine honey, chili paste, and apple cider vinegar to make the hot honey drizzle.
  7. Transfer the mushrooms to a serving dish. Top with crumbled feta and chopped walnuts.
  8. Drizzle hot honey over the top and finish with fresh parsley. Serve warm.

  • Use high heat to prevent mushrooms from becoming soggy and ensure caramelization.
  • Add feta and walnuts just before serving for best texture.
  • Regular honey plus chili flakes can substitute for hot honey.
