Ingredients

  • 1 large red onion, halved and thinly sliced
  • ¼ cup dried cranberries, chopped
  • 4 tablespoons balsamic vinegar, divided
  • 2 tablespoons water
  • 2 tablespoons brown sugar
  • 1 flatbread
  • ⅓ cup crumbled feta cheese
  • ½ cup baby arugula
  • 1 tablespoon agave nectar or honey

Instructions

  1. In a sauté pan, combine sliced onions, cranberries, 3 tablespoons balsamic vinegar, water, and brown sugar. Bring to a boil, then reduce heat to low, cover, and simmer for 10–15 minutes until soft and caramelized, stirring occasionally.
  2. In a small bowl, whisk together the remaining tablespoon of balsamic vinegar and agave nectar (or honey). Set aside.
  3. Warm the flatbread on a grill, in the oven, or on a stovetop grill pan until lightly crisped.
  4. Flip the flatbread and spread the caramelized onion mixture evenly over the top. Sprinkle with crumbled feta.
  5. Grill or bake for 5 minutes, or until the feta starts to melt and the flatbread is golden.
  6. Transfer to a cutting board. Top with fresh arugula and drizzle with the balsamic glaze. Slice and serve immediately.
