Ingredients

  • 2 tablespoons extra virgin olive oil
  • 4 cups onions, sliced into 1/4-inch thick pieces (about 2 to 3 medium onions)
  • 1 tablespoon brown sugar
  • 2 tablespoons balsamic vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 ounces (1 sheet) frozen puff pastry, thawed
  • 2 ounces chilled Brie cheese, rind removed and diced
  • 2 ounces Gorgonzola or other blue cheese, diced
  • 2 tablespoons chopped fresh tarragon (or 1/2 teaspoon crushed fennel seeds)

Instructions

  1. Heat olive oil in a large pan over medium-high heat. Add sliced onions and cook for about 10 minutes until soft and lightly browned.
  2. Add brown sugar, balsamic vinegar, salt, and pepper. Reduce heat to low and cook uncovered for 20–25 minutes, stirring occasionally, until deeply caramelized. Add a splash of water if onions dry out. Let cool slightly.
  3. Preheat oven to 400°F (200°C). Roll out the puff pastry to approximately 10×14 inches and place on a parchment-lined baking sheet. Prick all over with a fork.
  4. Spread the caramelized onions over the pastry, leaving a small border around the edges. Top with diced Brie and Gorgonzola. Sprinkle with chopped tarragon.
  5. Bake for 18–20 minutes, or until the pastry is golden and puffed, and the cheese is melted.
  6. Cool for 5 minutes before slicing. Serve warm or at room temperature.
