Ingredients

  • 1 tablespoon olive oil
  • 1 lb ground beef
  • 1 cup shredded cheese
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 small onion, finely chopped
  • 3 medium potatoes, thinly sliced
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Arrange thinly sliced potatoes in a baking dish. Drizzle with olive oil and season with salt and pepper. Bake for 20 minutes.
  3. In a skillet over medium heat, cook the chopped onion until soft. Add ground beef and cook until browned, breaking it apart as it cooks.
  4. Remove the potatoes from the oven and reduce the temperature to 400°F (200°C).
  5. Spread the beef and onion mixture evenly over the potatoes.
  6. Pour the cream of mushroom soup over the beef layer and spread evenly.
  7. Sprinkle shredded cheese over the top.
  8. Return to the oven and bake for 25 minutes, or until cheese is melted and bubbly and potatoes are tender.
  9. Let cool slightly before serving.

  • Swap beef for turkey or chicken for a lighter version.
  • Try different cheeses like mozzarella or a cheddar blend.
  • Season beef with garlic powder or paprika for extra flavor.
  • Store leftovers in the refrigerator for up to 3 days.
