Ingredients

  • 340 g (12 oz) spaghetti pasta
  • 3 cups (450 g) cooked chicken breast, shredded or diced
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped (150 g)
  • 3 cloves garlic, minced
  • 1 medium red bell pepper, diced (120 g)
  • 2 cups (480 ml) cream of mushroom soup
  • 1 cup (240 ml) sour cream
  • 1/2 cup (120 ml) whole milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 2 cups (200 g) shredded cheddar cheese
  • 1 cup (100 g) shredded mozzarella cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat oven to 180°C (350°F). Grease a large baking dish and set aside.
  2. Cook spaghetti in salted boiling water until al dente. Drain and set aside.
  3. Heat olive oil in a skillet over medium heat. Add onion and sauté 3–4 minutes until soft. Add garlic and cook 30 seconds.
  4. Add diced bell pepper and cook 2 minutes more.
  5. Lower heat and stir in cream of mushroom soup, sour cream, and milk. Mix until creamy and smooth.
  6. Season with salt, pepper, paprika, and garlic powder. Add cooked chicken and stir to coat.
  7. Add spaghetti to skillet and gently mix until well combined.
  8. Transfer to prepared baking dish. Sprinkle cheddar and mozzarella evenly over top.
  9. Bake uncovered for 25–30 minutes until cheese is bubbly and lightly golden. Let rest 5 minutes before serving. Garnish with parsley.
