Ingredients

  • 4 boneless, skinless chicken breasts (about 180200 g each)
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried Italian seasoning
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh parsley
  • 1/4 cup chicken broth
  • 1 tablespoon lemon juice

Instructions

  1. Slice a pocket into the side of each chicken breast, being careful not to cut all the way through.
  2. Mix mozzarella and cheddar cheese in a bowl. Stuff each chicken breast with the cheese mixture and gently press to seal.
  3. Season chicken on both sides with salt, black pepper, paprika, and Italian seasoning.
  4. Heat olive oil and butter in a large skillet over medium heat until melted and bubbling.
  5. Cook chicken for 5–6 minutes per side until golden brown.
  6. Add minced garlic and sauté for 30 seconds until fragrant.
  7. Pour in chicken broth and lemon juice, scraping the pan to release any browned bits.
  8. Reduce heat to low, cover, and simmer for 6–8 minutes until chicken is fully cooked and cheese is melted.
  9. Sprinkle with chopped parsley and serve hot.

  • Boneless thighs can be used instead of breasts—adjust cook time accordingly.
