Ingredients

  • 3 lbs Yukon Gold potatoes, washed and sliced about 1/4 inch thick
  • 1/4 cup butter
  • 1 cup onion, thinly sliced
  • 4 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups milk (2% preferred)
  • 1 cup chicken broth
  • 1 tablespoon fresh thyme, minced
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 cups sharp cheddar cheese, shredded
  • 1/2 cup Parmesan cheese, shredded

Instructions

  1. Preheat the oven to 400°F (200°C). Grease a 9×13-inch baking dish.
  2. Layer half of the sliced potatoes into the dish. Season lightly with salt and pepper.
  3. In a large skillet, melt butter over medium heat. Add onions and garlic and sauté for 3–5 minutes until softened.
  4. Whisk in flour and cook for 1 minute to form a roux. Gradually add milk and chicken broth, whisking to prevent lumps.
  5. Cook the sauce until it thickens. Add thyme, salt, and pepper. Stir well and remove from heat.
  6. Pour half of the sauce over the potatoes. Sprinkle half of the cheddar and Parmesan over the sauce.
  7. Repeat with remaining potatoes, sauce, and cheese.
  8. Cover with foil and bake for 35 minutes. Remove foil and bake an additional 25 minutes until bubbly and golden.
  9. Optional: Broil for 3–5 minutes for a crispy top.
  10. Let rest for 5 minutes before serving.
