Ingredients

  • 6 medium flour tortillas
  • 1 cup cooked shrimp, chopped
  • 1 cup lump crab meat
  • ½ cup cream cheese, softened
  • ½ cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • 2 tablespoons chopped fresh parsley, plus more for garnish
  • 2 cloves garlic, minced
  • 1 tablespoon butter
  • 1 cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon lemon juice
  • Salt and black pepper, to taste
  • Cooking spray

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish with cooking spray.
  2. In a bowl, mix shrimp, crab, cream cheese, mozzarella, cheddar, lemon juice, half the parsley, salt, and pepper until smooth.
  3. Warm tortillas in microwave (~15 seconds) until soft. Divide filling evenly, roll tightly, and place seam-side down in baking dish.
  4. In a skillet, melt butter and sauté garlic for 1 minute. Add heavy cream and simmer for 3–4 minutes. Stir in Parmesan and season with salt and pepper.
  5. Pour sauce over rolled tortillas in dish. Bake for 15–18 minutes, until bubbling and golden.
  6. Let cool slightly, garnish with remaining parsley, and serve warm.

Notes

  • You can substitute cooked lobster or flaked white fish for crab meat.
  • Add chopped spinach or artichoke to the filling for extra flavor.
  • Make ahead and refrigerate before baking—just add a few extra minutes when cooking.
