Ingredients

  • 3 pounds potatoes (Russet or Yukon Gold), diced
  • 23 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 pound ground beef
  • 1 packet taco seasoning
  • ¾ cup water
  • 2 cups shredded cheddar or Mexican-blend cheese
  • ½ cup sour cream
  • ½ cup warm milk or heavy cream
  • 2 tablespoons butter
  • ¼ cup sliced green onions (optional)
  • ½ cup diced tomatoes (optional)
  • 12 jalapeños, sliced (optional)
  • ¼ cup chopped fresh cilantro (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add potatoes, garlic powder, paprika, salt, and pepper. Cook 12–15 minutes until golden and tender.
  2. In another skillet, cook ground beef over medium heat until browned. Drain excess fat.
  3. Add taco seasoning and water to the beef. Simmer 3–5 minutes until thickened.
  4. Reduce heat under potatoes to low. Add butter, sour cream, and warm milk or cream, stirring gently to coat.
  5. Spoon taco meat evenly over the potatoes without stirring.
  6. Sprinkle cheese over the top, cover, and cook 3–5 minutes until melted.
  7. Remove from heat, add optional toppings, and serve hot.

  • Do not overcrowd the skillet to keep potatoes crispy.
  • Use mild or spicy taco seasoning to control heat.
  • Ground turkey or chicken can be substituted for beef.
  • Best served immediately for optimal texture.
