Ingredients

  • 6 cups Rice Chex cereal
  • 1 ½ cups white chocolate chips (or vanilla candy melts)
  • 1 cup powdered sugar
  • 1 (3.4 oz) box instant cheesecake pudding mix
  • ½ cup cherry chip cake mix (or strawberry cake mix substitute)
  • 1 cup freeze-dried cherries
  • 4 oz cream cheese, softened (optional, for drizzle)

Instructions

  1. In a large zip-top bag, combine powdered sugar, cheesecake pudding mix, and cherry chip cake mix. Shake to mix evenly.
  2. Melt white chocolate chips in microwave-safe bowl in 20–30 second intervals, stirring until smooth.
  3. Place cereal in large bowl. Pour melted chocolate over cereal and fold gently until coated.
  4. Transfer coated cereal to the bag with dry mixture. Seal and shake until evenly coated.
  5. Spread mixture on a parchment-lined baking sheet. Sprinkle freeze-dried cherries over the top while still tacky. Let cool and set.
  6. (Optional) Beat cream cheese until smooth and drizzle over cooled mixture for extra richness. Refrigerate if using.
  7. Store in an airtight container once set.
