Ingredients

  • 8 Medjool dates, pitted
  • 1 cup old-fashioned rolled oats
  • 1/2 cup unsweetened shredded coconut
  • 2 tablespoons raw honey
  • 1 tablespoon coconut oil, at room temperature
  • 1/8 teaspoon salt

Instructions

  1. Process pitted dates in a food processor until small and sticky.
  2. Add rolled oats, shredded coconut, honey, coconut oil, and salt; process until crumbly and combined.
  3. Scoop mixture into 8–10 portions and roll into bite-sized balls.
  4. Place in an airtight container and refrigerate to firm up.
