Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1 small onion, diced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup pearl barley
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup mushrooms, sliced
  • 2 cups fresh spinach or kale, chopped
  • 1 tablespoon lemon juice

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken and cook until lightly browned. Remove and set aside.
  2. In the same pot, sauté onion, carrots, and celery for about 5 minutes until softened.
  3. Add garlic and cook for 1 minute until fragrant.
  4. Pour in chicken broth and add barley, thyme, oregano, bay leaf, salt, and black pepper. Stir well.
  5. Return chicken to the pot and bring to a boil, then reduce heat, cover, and simmer for 40–50 minutes until barley is tender.
  6. Add mushrooms and cook for another 10 minutes.
  7. Stir in spinach or kale and cook until wilted, about 2–3 minutes.
  8. Finish with lemon juice, remove bay leaf, adjust seasoning, and serve hot.

  • Use chicken breast for a leaner option or bone-in chicken for more flavor.
  • Add potatoes or extra vegetables for a heartier stew.
