Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 6 large flour tortillas

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sliced bell peppers and onion. Sauté for 5–7 minutes until softened.
  3. Add shredded chicken to the skillet along with garlic powder, onion powder, paprika, salt, and black pepper. Stir and cook for another 5 minutes.
  4. Warm tortillas in a skillet or microwave until soft and pliable.
  5. To assemble, spoon the chicken and pepper mixture onto each tortilla.
  6. Drizzle ranch dressing over the filling and sprinkle with shredded cheddar cheese.
  7. Roll each tortilla tightly into a burrito, folding in the sides as you roll.
  8. Place each burrito seam-side down in a clean skillet over medium heat. Cook until golden and crispy on all sides.
  9. Serve warm with extra ranch if desired.
