Ingredients

  • 1 pound ground chicken (preferably a mix of white and dark meat)
  • 2 tablespoons pure maple syrup
  • 1 teaspoon kosher salt
  • 1 teaspoon dried sage
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon extra-virgin olive oil

Instructions

  1. In a large bowl, combine ground chicken, maple syrup, salt, dried sage, garlic powder, onion powder, dried thyme, black pepper, and nutmeg. Mix gently until evenly combined without overmixing.
  2. Divide the mixture into 12 equal portions. Roll into balls and flatten into patties about 1/2 inch thick.
  3. Heat olive oil in a large non-stick skillet over medium heat.
  4. Cook six patties at a time for 2 to 3 minutes per side, or until golden brown and the internal temperature reaches 165°F (74°C).
  5. Remove from the pan and repeat with remaining patties, adding more oil if needed.
  6. Serve warm.

Notes

  • Use a mix of white and dark meat to prevent dryness.
  • Avoid overmixing to keep patties tender.
  • Internal temperature should reach 165°F (74°C).
  • Store cooked patties in the refrigerator for 4 to 5 days.
  • Freeze cooked or raw patties for up to 3 months with parchment between layers.
  • Reheat gently to prevent drying out.
