Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken breast, thinly sliced into strips
  • 1 package fajita seasoning (or homemade blend)
  • 3 bell peppers (e.g., green, yellow, red), sliced
  • 1 small onion, sliced
  • 2 cups cooked rice

Instructions

  1. In a large skillet over medium-high heat, add 1 tablespoon of olive oil and the sliced chicken. Sprinkle half of the fajita seasoning over the chicken and cook until no longer pink. Remove from skillet and set aside.
  2. In the same skillet, add remaining olive oil, bell peppers, and onion. Sprinkle with remaining fajita seasoning and sauté until tender.
  3. Return the chicken to the skillet and stir to combine with the vegetables. Cook until everything is heated through.
  4. Divide the cooked rice into four meal prep containers (about ½ cup per container). Top each with the chicken and vegetable mixture (about 1 cup each).
  5. Seal the containers and refrigerate. Reheat before serving and add optional toppings like avocado, salsa, or lime juice.
