Ingredients

  • 12 oz penne pasta
  • 3 tbsp unsalted butter
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • 1/2 tsp dried sage
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups cooked shredded chicken
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley

Instructions

  1. Bring a large pot of salted water to a boil. Cook the penne pasta until al dente, then drain and set aside.
  2. In a large skillet or Dutch oven, melt butter over medium heat. Add onion, carrots, and celery. Sauté for 7–10 minutes until softened.
  3. Add the minced garlic and cook for 1 minute until fragrant.
  4. Sprinkle in the flour, stirring to coat the vegetables, and cook for 1 minute to eliminate raw flour taste.
  5. Gradually pour in the chicken broth while stirring to prevent lumps. Stir in the heavy cream and bring to a simmer until thickened.
  6. Season with thyme, sage, salt, and pepper.
  7. Stir in the shredded chicken, peas, and corn. Cook for 2–3 minutes until heated through.
  8. Fold in the cooked pasta and mix until well combined.
  9. Remove from heat and stir in Parmesan cheese and fresh parsley before serving.

  • Use rotini or bow-tie pasta as a substitute for penne.
  • Replace heavy cream with half-and-half for a lighter version.
