Ingredients

  • 1215 puff pastry sheets (5x5 inches), thawed
  • 12 oz cooked, shredded chicken breast
  • 2 tablespoons salted butter
  • 2 tablespoons all-purpose flour
  • 12 teaspoons yellow mustard
  • 1/2 teaspoon kosher salt (adjust to taste)
  • 1/2 teaspoon cracked black pepper
  • 1/2 teaspoon garlic powder
  • 3/4 to 1 cup milk (whole or 2%)
  • 1 large egg, lightly beaten (for egg wash)

Instructions

  1. In a sauté pan over medium heat, melt butter. Add flour, garlic powder, and black pepper. Whisk and cook for 75 seconds.
  2. Add mustard and whisk to combine. Slowly pour in 3/4 cup of milk while whisking constantly. Simmer until thickened.
  3. Stir in shredded chicken and salt. Add more milk if needed to reach creamy consistency. Taste and adjust seasoning. Let mixture cool completely.
  4. Cut puff pastry sheets diagonally into triangles. Place 1 tablespoon of cooled filling on one triangle, fold over to seal, and crimp edges with a fork.
  5. Place filled pastries on a parchment-lined tray. Chill for 45–60 minutes, or freeze until solid for later use.
  6. Preheat oven to 375ºF (190ºC). Arrange pastries on a baking sheet and brush tops with beaten egg.
  7. Bake for 25–30 minutes (add a few minutes if baking from frozen), until puffed and golden brown. Serve warm.
