Ingredients

  • 2 tablespoons olive oil
  • 500 grams boneless skinless chicken breast, cut into thin strips
  • 1 medium onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 cup broccoli florets
  • 2 tablespoons date molasses
  • 2 tablespoons soy sauce
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon chili flakes (optional)
  • 2 tablespoons water
  • 1 teaspoon cornstarch

Instructions

  1. Heat 1 tablespoon olive oil in a large pan or wok over medium-high heat. Add chicken and cook for 5–7 minutes until golden and cooked through. Remove and set aside.
  2. Add remaining olive oil to the pan. Sauté onion for 2–3 minutes until softened, then add garlic and cook for 30 seconds.
  3. Add bell peppers and broccoli and stir fry for 4–5 minutes, keeping vegetables slightly crisp.
  4. Return chicken to the pan and mix with vegetables.
  5. In a small bowl, whisk together date molasses, soy sauce, lemon juice, cumin, black pepper, salt, chili flakes, water, and cornstarch.
  6. Pour sauce over the mixture and stir continuously for 2–3 minutes until thickened and evenly coated.
  7. Remove from heat and serve warm.
