Ingredients

  • 1 can chickpeas (15 oz / 425 g), drained and rinsed
  • 1 medium avocado, pitted and diced
  • 115 g feta cheese, crumbled
  • 75 g red onion, thinly sliced
  • 50 g fresh parsley, finely chopped
  • 25 g fresh mint, finely chopped
  • 45 ml olive oil
  • 30 ml freshly squeezed lemon juice
  • 1 garlic clove, minced
  • 2.5 ml dried oregano
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large bowl, combine the chickpeas, diced avocado, crumbled feta, red onion, parsley, and mint. Gently toss to combine.
  2. In a small bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper until well blended.
