Ingredients

  • 810 large boneless skinless chicken thighs
  • 2 small yellow onions, thinly sliced
  • 3 large garlic cloves, minced
  • 2 chipotle peppers in adobo sauce, finely chopped
  • 1 tablespoon maple syrup
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1 large lime, juiced

Instructions

  1. Preheat the oven and set it to broil to reach a high cooking temperature.
  2. In a large baking dish or sheet tray, combine sliced onions, minced garlic, chopped chipotle peppers, maple syrup, olive oil, and salt.
  3. Add the chicken thighs and toss everything together so the chicken is evenly coated and the onions are spread across the bottom of the pan.
  4. Arrange the chicken thighs flat on top of the onions to help them cook evenly and brown properly.
  5. Place the dish in the oven and broil for 7–8 minutes until the tops begin to brown.
  6. Remove the pan, flip the chicken pieces, and return it to the oven.
  7. Broil for another 5–7 minutes until the chicken is cooked through and the edges are slightly crispy.
  8. Remove from the oven and cut the chicken into bite-sized pieces directly in the pan.
  9. Squeeze fresh lime juice over the chicken, taste for seasoning, and add a pinch of extra salt if needed.
  10. Serve hot over rice, in tacos or wraps, or alongside a fresh salad.

  • Chicken thighs stay juicy under high heat and develop a flavorful caramelized edge.
  • For less spice, use only one chipotle pepper or remove the seeds.
  • Marinating the chicken in the seasoning mixture for 1–2 hours deepens the flavor.
