Ingredients

  • 2 cups sour cream
  • 1/4 cup mayonnaise (optional, for a richer sauce)
  • 3 chipotle peppers in adobo sauce
  • 2 tablespoons adobo sauce (from the can)
  • 1 to 2 tablespoons fresh lime juice
  • 1/2 teaspoon ground cumin
  • 1/4 cup fresh cilantro leaves, loosely packed
  • 1/4 teaspoon salt, or to taste

Instructions

  1. Add sour cream, mayonnaise (if using), chipotle peppers, adobo sauce, lime juice, cumin, cilantro, and salt to a blender or food processor.
  2. Blend until smooth and evenly colored, scraping down the sides as needed.
  3. Taste and adjust seasoning: add more chipotle peppers for heat, extra adobo sauce for smoky flavor, or additional lime juice for brightness. Blend briefly again if needed.
  4. Serve immediately, or refrigerate 15–30 minutes to let flavors meld and sauce thicken slightly.

Notes

  • Mild version: Use 1 chipotle pepper and 1–2 tablespoons adobo sauce.
  • Extra spicy: Use 4–5 chipotle peppers and additional adobo sauce.
  • Chipotle yogurt sauce: Substitute sour cream with 2 cups plain Greek yogurt.
  • Chipotle crema: Use Mexican crema instead of sour cream for a thinner sauce.
  • Avocado chipotle sauce: Blend in 1/2 ripe avocado for extra creaminess.
  • Store in an airtight container in the refrigerator up to 4–5 days. Stir before serving.
