Ingredients

  • 1/2 cup butter, at room temperature
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 teaspoon vanilla extract
  • 1.25 cups heat-treated flour
  • A pinch of salt
  • 1/3 cup chocolate chips
  • 1 cup cold whipping cream
  • 115g cream cheese, at room temperature
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Heat-treat the flour by microwaving it on a plate for 1 minute or baking at 250°F (120°C) for 8–10 minutes. Let cool.
  2. Cream butter with brown and white sugar until light and fluffy. Add vanilla and salt, then mix in cooled, heat-treated flour. Fold in chocolate chips. Set aside.
  3. In a separate bowl, beat cream cheese, powdered sugar, and vanilla until smooth. In another bowl, whip the cold cream to soft peaks.
  4. Fold whipped cream gently into the cream cheese mixture until combined.
  5. Break the cookie dough into small chunks and fold into the mousse mixture without overmixing.
  6. Spoon into cups or bowls and chill for at least 1 hour before serving.
