Ingredients

1 tbsp butter (salted or unsalted)

1 tbsp caster sugar

1 tbsp light brown sugar

½ tsp vanilla extract

Pinch of salt

1 egg yolk (room temperature)

3 tbsp plain (all-purpose) flour

2 tbsp chocolate chips (milk, dark, or white)

Instructions

  1. Place butter in a microwave-safe mug and microwave for about 30 seconds, or until melted.
  2. Stir in caster sugar, brown sugar, vanilla extract, and a pinch of salt until combined.
  3. Add the egg yolk and stir until smooth.
  4. Mix in the flour until the batter is lump-free, then fold in the chocolate chips.
  5. Microwave on high for 40 seconds, checking doneness. If needed, cook in 5-second increments until the top is set but the inside is still slightly gooey.
  6. Let cool for a few minutes and enjoy warm, optionally topped with ice cream.

Notes

  • Add 1 tbsp cocoa powder for a double chocolate version.
  • Swirl in peanut butter for a nutty twist.
  • Fold in chopped walnuts or pecans for crunch.
  • Use gluten-free flour for a gluten-free option.
