Ingredients

  • 1 1/2 cups almond flour
  • 1 cup quick-cooking oats (or 3/4 cup rolled oats)
  • 1/2 cup plus 2 tablespoons pure maple syrup
  • 1/3 cup tahini (sesame paste)
  • 2 tablespoons olive oil (or oil of choice)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup chocolate chunks or chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8 x 8-inch baking dish with parchment paper.
  2. In a large bowl, whisk together tahini, eggs, maple syrup, olive oil, and vanilla until smooth.
  3. Add almond flour, oats, baking soda, and salt. Stir until fully combined and no dry streaks remain.
  4. Fold in chocolate chunks, reserving a few to sprinkle on top.
  5. Spread batter evenly into prepared pan and top with remaining chocolate.
  6. Bake for 25 to 30 minutes, until a toothpick inserted in the center comes out clean or with moist crumbs.
  7. Cool at least 5 minutes before slicing. For cleaner cuts, cool completely.
