Ingredients

  • 1 cup creamy peanut butter (or crunchy for added texture)
  • 4 tbsp unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 ½ cups crispy rice cereal
  • 16 oz chocolate candy coating or melting wafers
  • Optional: chocolate jimmies, chopped salted peanuts

Instructions

  1. Line a large baking sheet with parchment paper.
  2. Mix peanut butter and softened butter in a large bowl until smooth.
  3. Stir in vanilla, then gradually add powdered sugar until thick and firm.
  4. Gently fold in crispy rice cereal.
  5. Roll mixture into 1-inch balls and place on tray.
  6. Chill in refrigerator 30 minutes or freeze 20 minutes until firm.
  7. Melt chocolate in microwave or double boiler until smooth.
  8. Dip each ball in melted chocolate, let excess drip off, then return to tray.
  9. Sprinkle with jimmies or peanuts if using.
  10. Let chocolate set at room temperature or refrigerate 10–15 minutes before serving.
