Ingredients

  • 1 1/2 cups full-fat cottage cheese
  • 1 cup fresh blueberries, washed and thoroughly dried
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon pure vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a bowl, mix cottage cheese, honey (or maple syrup), and vanilla extract until combined. Blend briefly for a smoother texture if desired.
  3. Gently fold in the blueberries without crushing them.
  4. Scoop 2-tablespoon portions onto the prepared baking sheet to form 10–12 clusters.
  5. Freeze for 1–2 hours until completely firm.
  6. Melt chocolate chips with coconut oil in 20-second microwave intervals, stirring until smooth.
  7. Dip each frozen cluster into melted chocolate, coating completely. Let excess drip off and return to parchment.
  8. Freeze again for 10–15 minutes until chocolate is set.
  9. Store chilled until ready to serve.

Notes

  • Ensure blueberries are completely dry to prevent icy texture.
  • Let frozen clusters sit 1–2 minutes before dipping to prevent chocolate cracking.
  • Store refrigerated up to 4 days.
  • Freeze up to 1 month with parchment between layers.
  • Blending cottage cheese creates a smoother center.
  • Reheating is not recommended as chocolate may melt unevenly.
