Ingredients

  • 2 cups Medjool dates, pitted
  • 2 cups raw cashews, unsalted
  • 1 cup whole almonds, unsalted
  • ¾ cup unsweetened cocoa powder
  • ½ cup unsweetened shredded coconut
  • 2 tablespoons coconut oil, melted
  • 2 teaspoons vanilla extract
  • 2 tablespoons brewed espresso
  • ½ teaspoon fine sea salt
  • Optional garnish: flaked sea salt, unsweetened shredded coconut

Instructions

  1. Place dates, cashews, almonds, cocoa powder, shredded coconut, melted coconut oil, vanilla extract, espresso, and sea salt into a food processor.
  2. Pulse until mixture breaks down and forms a sticky ball. If too dry, add more espresso or water, one tablespoon at a time.
  3. Using a cookie scoop or spoon, portion and roll mixture into smooth balls.
  4. Arrange on a parchment-lined baking tray. Sprinkle with flaked sea salt or shredded coconut if desired.
  5. Freeze for 30 minutes until firm. Transfer to an airtight container for storage.

Notes

  • Substitute espresso with strong coffee or water if preferred.
  • For a nut-free version, use sunflower, pumpkin, and hemp seeds.
  • Add chopped dried cherries for a chocolate-cherry twist.
  • Roll in cocoa powder or shredded coconut for extra texture.
