Ingredients

  • 1¼ cups pitted Medjool dates (about 10 dates)
  • ¼ cup peanut butter
  • 2 tablespoons peanut butter
  • ¾ cup old fashioned rolled oats
  • 3 tablespoons mini chocolate chips
  • 1 tablespoon chia seeds (or ground flaxseed/hempseed/extra oats)
  • ⅛ teaspoon kosher salt
  • 3 tablespoons cocoa powder

Instructions

  1. If dates are dry, soak them in hot water for 10 minutes, then drain and pat dry.
  2. In a food processor, pulse dates until broken down into a sticky mass.
  3. Add oats, ¼ cup plus 2 tablespoons peanut butter, chocolate chips, chia seeds, and salt. Pulse until mixture is combined and crumbly.
  4. Add cocoa powder and pulse again. Test texture — if too dry, add a bit more peanut butter; if too sticky, add more oats.
  5. Roll dough into balls about 1 inch in diameter (makes ~14 balls).
  6. Enjoy immediately or chill in the fridge for 10 minutes to firm up.
