Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 cup old-fashioned rolled oats
  • ½ cup granulated sugar
  • ½ cup light brown sugar, packed
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup unsalted butter, cold and cubed
  • 1 cup raspberry jam or preserves
  • 1 cup semi-sweet chocolate chips
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper, leaving overhang for easy removal.
  2. In a large bowl, combine flour, oats, granulated sugar, brown sugar, baking soda, and salt.
  3. Cut in cold butter using a pastry cutter or fingers until mixture resembles coarse sand. Set aside 1 cup of mixture for topping.
  4. Press remaining mixture into the bottom of the prepared pan to form an even crust.
  5. Spread raspberry jam evenly over the crust.
  6. Sprinkle chocolate chips over the jam.
  7. Stir vanilla extract into the reserved crumb mixture and sprinkle it over the top.
  8. Bake for 30–35 minutes or until golden brown and filling is bubbling slightly.
  9. Cool completely in the pan, then lift out using parchment paper and cut into bars.
