Ingredients

  • 1 ½ cups chocolate cookie crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened

  • 1 cup sour cream

Instructions

  1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. Mix cookie crumbs and melted butter. Press firmly into pan base to form crust.
  3. In a large bowl, beat cream cheese until smooth. Gradually add sugar and mix well.
  4. Add vanilla and eggs one at a time, mixing after each. Scrape bowl as needed.
  5. Stir in sour cream, strawberry puree, and cocoa powder until well combined.
  6. Pour batter over crust and smooth the top.
  7. Bake 50–60 minutes until center is just set but slightly jiggly.
  8. Turn off oven, crack door, and let cheesecake cool inside for 1 hour.
  9. Cool completely at room temperature, then chill for at least 4 hours or overnight.
  10. Top with sliced strawberries and chocolate shavings before serving.
