Ingredients

  • 1.5 cups chocolate cookie crumbs
  • 1/3 cup unsalted butter, melted
  • 680 g cream cheese, at room temperature
  • 1 cup granulated sugar
  • 3 large eggs, at room temperature
  • 3/4 cup heavy cream or strained yogurt
  • 225 g dark or semi-sweet chocolate, melted and cooled
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 160°C (325°F). Line the bottom of a 22–23 cm (9-inch) springform pan with parchment paper.
  2. Mix chocolate cookie crumbs and melted butter until evenly combined. Press firmly into the base of the pan. Bake at 180°C (350°F) for 10 minutes, then set aside to cool slightly.
  3. In a large bowl, beat cream cheese until completely smooth. Add sugar and mix to combine.
  4. Add heavy cream (or strained yogurt), vanilla extract, cocoa powder, and salt. Mix until smooth.
  5. Add eggs one at a time, mixing on low speed until just incorporated.
  6. Stir in melted chocolate until the batter is fully combined and smooth.
  7. Pour filling over crust and tap the pan gently to remove air bubbles.
  8. Bake for 50–60 minutes, until edges are set and center jiggles slightly.
  9. Turn off oven, crack the door open, and cool the cheesecake inside for 1 hour.
  10. Refrigerate for at least 4 hours or overnight before slicing and serving.
