Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons all-purpose flour (for coating apples)

  • 2 cups diced apples
  • ½ cup unsalted butter, room temperature

  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • ½ cup milk
  • For the topping:
  • ½ cup melted butter
  • ¼ cup granulated sugar
  • ¼ cup ground cinnamon

Instructions

  1. Preheat oven to 375°F (190°C) and grease or line a 12-cup muffin tin.
  2. In a medium bowl, sift together 2 cups flour, baking powder, salt, and 2 teaspoons cinnamon.
  3. In a small bowl, toss diced apples with 2 teaspoons flour and ½ teaspoon cinnamon. Set aside.
  4. In a large bowl, cream butter and sugar until light and fluffy, about 3 minutes.
  5. Add eggs one at a time, beating well after each. Mix in vanilla extract.
  6. Gradually add dry ingredients to the wet mixture, alternating with milk, and mix until just combined.
  7. Gently fold in the coated apples.
  8. Divide batter evenly among muffin cups, filling each ⅔ to ¾ full.
  9. Bake for 30 minutes or until a toothpick inserted comes out clean. Let muffins cool slightly.
  10. For topping: melt butter and mix sugar with cinnamon in a separate bowl. Dip warm muffin tops in melted butter, then in cinnamon sugar. Serve warm or at room temperature.
