Ingredients

  • Nonstick cooking spray for greasing the pan
  • 180 grams all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon kosher salt
  • 2 teaspoons ground cinnamon
  • 60 grams unsalted butter, melted and slightly cooled
  • 50 grams granulated sugar
  • 1 large egg, at room temperature
  • 0.5 teaspoon vanilla extract
  • 120 millilitres unsweetened applesauce
  • 1.5 cups finely diced Honeycrisp or Gala apples (about 2 medium apples)
  • 240 grams powdered sugar, sifted
  • 100 millilitres apple cider or apple juice

Instructions

  1. Preheat the oven to 175°C. Lightly coat a mini muffin tin with nonstick cooking spray.
  2. In a medium bowl, whisk together the flour, baking powder, kosher salt, and ground cinnamon.
  3. In a separate bowl, whisk the melted butter and granulated sugar until smooth. Add the egg, vanilla extract, and applesauce, and mix until creamy.
  4. Add the dry ingredients to the wet and stir gently just until combined. Do not overmix.
  5. Fold in the diced apples until evenly distributed.
  6. Spoon the batter into the prepared mini muffin tin, filling each cup about three-quarters full.
  7. Bake for 12 to 15 minutes, or until a toothpick inserted into the center comes out clean.
  8. While fritter bites cool slightly, whisk together the powdered sugar and apple cider until smooth and pourable.
  9. Dip the tops of the warm fritter bites into the glaze, let excess drip off, and place on a wire rack to set.
