Ingredients

  • 2 cans (8 count each) refrigerated cinnamon rolls with icing
  • 4 medium apples, peeled, cored, and thinly sliced
  • 1/4 cup unsalted butter
  • 1/3 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 teaspoon salt
  • 1 teaspoon lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a medium skillet, melt butter over medium heat. Add sliced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Cook 5–7 minutes until slightly softened. Stir in vanilla extract and remove from heat.
  3. In a mixing bowl, beat cream cheese and granulated sugar until smooth. Add eggs and salt, mixing until fully combined.
  4. Cut each cinnamon roll into quarters. Layer half of the cinnamon roll pieces at the bottom of the prepared baking dish.
  5. Spread half of the cream cheese mixture over the cinnamon rolls, then add half of the cooked apples.
  6. Repeat layers with remaining cinnamon roll pieces, cream cheese mixture, and apples.
  7. Bake 35–40 minutes until cream cheese layer is set and top is lightly golden.
  8. Allow to cool slightly before serving. Drizzle with icing from the cinnamon rolls if desired.
