Ingredients

230 g whole milk, lukewarm

2 Tbsp granulated sugar

2 tsp active dry yeast

425 g all-purpose flour

½ tsp salt

1 large egg, room temperature, lightly beaten

50 g neutral oil or light olive oil

Oil for frying (neutral oil or light olive oil)

100 g granulated sugar

1 Tbsp cinnamon

½ tsp ground cardamom (optional)

Pinch of salt (for cinnamon sugar)

Instructions

  1. In a bowl, combine lukewarm milk, sugar, and yeast. Let sit for 5–10 minutes until foamy.
  2. Add flour, salt, egg, and oil. Mix and knead for 10–12 minutes until smooth and elastic.
  3. Shape dough into a ball, cover, and refrigerate for at least 3 hours or overnight.
  4. Roll dough to ½″ thickness on a floured surface. Cut into circles and punch out centers.
  5. Place doughnuts on parchment squares on a tray. Re-roll scraps if desired.
  6. Let proof for 35–45 minutes until they spring back slowly when pressed.
  7. Heat oil to 350°F (180°C). Mix cinnamon sugar ingredients in a bowl.
  8. Fry 2 doughnuts at a time for about 3 minutes, flipping halfway through.
  9. Drain on a rack and after 30 seconds, toss in cinnamon sugar.
  10. Repeat for all doughnuts and serve fresh.
