Ingredients

  • For the banana bread:
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 3 ripe bananas, mashed
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • For the caramel walnut glaze:
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat oven to 175°C (350°F) and grease or line a loaf pan.
  2. In a bowl, whisk flour, baking soda, salt, and cinnamon.
  3. In another bowl, mix mashed bananas with melted butter and sugar.
  4. Add eggs one at a time, then mix in vanilla extract and milk.
  5. Fold dry ingredients into wet mixture until just combined.
  6. Pour batter into prepared pan and bake for 50–60 minutes until a toothpick comes out clean.
  7. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. For the glaze, heat brown sugar and butter in a saucepan until melted and bubbling.
  9. Add milk and cook 1–2 minutes until slightly thickened. Remove from heat and stir in vanilla and walnuts.
  10. Pour warm glaze over cooled banana bread and let set before slicing.
