Ingredients

  • 1 tablespoon olive oil
  • 1 large yellow onion, finely chopped
  • 2 celery stalks, chopped
  • 1 green bell pepper, chopped
  • 3 garlic cloves, minced
  • 1 pound ground beef
  • 1 1/2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 teaspoons dried Italian seasoning
  • 1 teaspoon smoked paprika
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 1 can (28 ounces) diced tomatoes
  • 1 can (15 ounces) tomato sauce
  • 1 tablespoon Worcestershire sauce
  • 1 pound potatoes, peeled and diced into small cubes
  • 2 cups frozen mixed vegetables (carrots, peas, green beans, and corn)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, celery, and bell pepper. Cook for 5 minutes until softened. Stir in garlic and cook for 30 seconds.
  2. Add ground beef and season with salt, black pepper, Italian seasoning, and smoked paprika. Cook until browned and fully cooked, breaking up the meat as it cooks.
  3. Stir in tomato paste and cook for 1–2 minutes.
  4. Add beef broth, diced tomatoes (with juices), tomato sauce, and Worcestershire sauce. Stir to combine.
  5. Add diced potatoes and frozen mixed vegetables. Bring to a gentle boil, then reduce heat to low. Cover and simmer for 25–30 minutes until potatoes are tender.
  6. Taste and adjust seasoning as needed. Serve hot.

  • For extra vegetables, add zucchini, cabbage, or spinach during the last 10 minutes of cooking.
