Ingredients

  • 4 ripe tomatoes, finely diced
  • 1 French baguette or Italian bread loaf, sliced into 1/2-inch thick pieces
  • 1/4 cup fresh basil leaves, finely chopped
  • 2 garlic cloves, peeled
  • 3 tablespoons extra virgin olive oil, plus more for drizzling
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon fine salt, or to taste
  • 1/4 teaspoon black pepper, or to taste

Instructions

  1. Place diced tomatoes in a bowl, removing excess seeds and liquid. Add basil, olive oil, balsamic vinegar, salt, and pepper. Mix gently and let sit for 5 minutes.
  2. Preheat oven to 400°F (200°C). Arrange bread slices on a baking sheet and toast for about 5 minutes until lightly golden.
  3. While warm, rub each toast slice with a peeled garlic clove on one side.
  4. Spoon the tomato mixture over each slice and drizzle with extra olive oil if desired.
  5. Serve immediately while the bread is crisp.
