Ingredients

6 large egg yolks

3/4 cup granulated sugar

1 cup whole milk

1 1/4 cups heavy cream

1 teaspoon pure vanilla extract

8 ounces mascarpone cheese, room temperature

1 1/2 cups strong brewed espresso, cooled

2 tablespoons coffee liqueur (optional)

About 24 ladyfinger cookies (savoiardi)

Unsweetened cocoa powder, for dusting

Instructions

  1. Whisk egg yolks and sugar in a heatproof bowl until combined.
  2. Place bowl over simmering water (double boiler) and whisk constantly until thick and pale, about 5–7 minutes. Remove and cool slightly.
  3. Stir in whole milk until smooth.
  4. Whip heavy cream with vanilla until stiff peaks form.
  5. Fold mascarpone cheese gently into egg yolk mixture until smooth.
  6. Carefully fold whipped cream into mascarpone mixture until creamy.
  7. Combine espresso and coffee liqueur in a shallow dish.
  8. Quickly dip ladyfingers in espresso mixture, avoiding soaking.
  9. Arrange a layer of dipped ladyfingers in a 9×9 inch dish.
  10. Spread half the mascarpone cream over ladyfingers.
  11. Add another layer of dipped ladyfingers.
  12. Spread remaining mascarpone cream on top.
  13. Cover and refrigerate at least 4 hours or overnight.
  14. Before serving, dust with cocoa powder.

Notes

  • Substitute coffee liqueur with Marsala wine or omit for non-alcoholic.
  • Add grated dark chocolate between layers for extra richness.
  • Use flavored espresso like hazelnut or vanilla for variation.
  • For lighter version, substitute half heavy cream with Greek yogurt or use light mascarpone.
