Ingredients

  • 3 extra large eggs, room temperature
  • 1/4 teaspoon cream of tartar
  • 3 tablespoons cream cheese, softened (or Greek yogurt)
  • 1/8 teaspoon kosher salt

Instructions

  1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Carefully separate the eggs, ensuring no yolk gets into the whites.
  3. In one bowl, beat egg whites with cream of tartar until stiff peaks form.
  4. In a separate bowl, whisk egg yolks with cream cheese and salt until smooth.
  5. Gently fold the whipped egg whites into the yolk mixture a little at a time until fully combined.
  6. Spoon mixture into 6 even mounds on the baking sheet.
  7. Bake for 25–30 minutes, until golden brown.
  8. Let cool for 5–10 minutes before serving.
