Ingredients

  • 4 cups vegetable broth (or chicken broth)
  • 1 can (14 ounces) coconut milk
  • 2 medium carrots, sliced
  • 1 red bell pepper, sliced
  • 1 cup mushrooms, sliced
  • 2 cups baby spinach or kale
  • 2 tablespoons lime juice
  • 2 tablespoons soy sauce or tamari
  • 1 teaspoon brown sugar (optional)
  • Fresh cilantro or green onions, for garnish
  • Cooked rice or rice noodles (optional, for serving)

Instructions

  1. Heat coconut oil in a large pot over medium heat. Add onion and sauté until soft and translucent.
  2. Stir in garlic and ginger, cooking until fragrant, about 1 minute. Mix in curry paste and cook for another minute.
  3. Pour in vegetable broth and coconut milk. Stir to combine and bring to a gentle simmer.
  4. Add carrots, bell pepper, and mushrooms. Cook until vegetables are tender, about 10–12 minutes.
  5. Stir in spinach or kale and let it wilt into the soup.
  6. Season with lime juice, soy sauce, and brown sugar if using. Adjust flavors to taste.
  7. Serve hot, garnished with cilantro or green onions. Optionally, ladle over rice or rice noodles for a heartier meal.
