Ingredients

  • For the dough:
    • 360 g all-purpose flour
    • 50 g granulated sugar
    • 7 g instant yeast
    • 1/2 teaspoon salt
    • 180 ml warm milk
    • 60 g unsalted butter, melted
    • 1 large egg
  • For the coffee cinnamon filling:
    • 100 g light brown sugar
    • 60 g unsalted butter, softened
    • 2 teaspoons ground cinnamon
    • 1 tablespoon instant coffee granules
  • For the coffee icing:
    • 180 g powdered sugar
    • 1 1/2 teaspoons instant coffee granules
    • 2 to 3 tablespoons warm milk
    • 1/2 teaspoon vanilla extract

Instructions

  1. In a large bowl, mix flour, sugar, yeast, and salt. Add warm milk, melted butter, and egg. Mix to form a soft dough.
  2. Knead for about 8 minutes by hand or with a mixer until smooth and elastic.
  3. Place dough in a lightly greased bowl, cover, and let rise for 60–90 minutes until doubled.
  4. Mix all filling ingredients together in a bowl until smooth.
  5. Roll dough into a 30 x 40 cm rectangle on a floured surface. Spread filling evenly over the dough.
  6. Roll into a log from the long side and cut into 9 equal pieces. Place in a greased 23 cm square baking dish. Cover and let rise for another 30–40 minutes.
  7. Preheat oven to 180°C (350°F). Bake rolls for 22–26 minutes until golden and cooked through.
  8. To make icing, dissolve instant coffee in warm milk. Mix with powdered sugar and vanilla until smooth. Drizzle over warm rolls.

Notes

  • Prepare the night before and bake in the morning for a fresh breakfast.
  • Use strong brewed coffee in the icing if needed, but instant gives a stronger flavor.
  • Adjust icing thickness by using more or less milk.
  • Reheat rolls before serving for the best soft texture.
