Ingredients

  • 1 cup cold coffee
  • 1/2 cup cold almond milk

Instructions

  1. Prepare your coffee and let it cool completely to room temperature or chill in the refrigerator.
  2. In a mixing jug, combine the cold coffee, almond milk, and maple syrup. Add vanilla extract and cinnamon if using.
  3. Whisk until the mixture is fully blended and smooth.
  4. Pour into popsicle molds, leaving a little space at the top to allow for expansion.
  5. Insert popsicle sticks and freeze for at least 6 hours or until fully solid.
  6. To release, let the molds sit at room temperature for a few minutes before gently removing the popsicles.
