Ingredients

  • 1 cup long-grain white rice
  • 2 cups water
  • 2 cups whole milk
  • 1 cup sweetened condensed milk
  • 1 tablespoon instant coffee granules
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt

Instructions

  1. Rinse the rice under cold water until the water runs mostly clear.
  2. In a medium saucepan, combine rice and water. Bring to a boil over medium-high heat.
  3. Reduce heat to low, cover, and simmer for 12–15 minutes until rice is tender and water is mostly absorbed.
  4. Add milk, sweetened condensed milk, instant coffee, cinnamon, and salt. Stir to combine.
  5. Cook over low heat for 15–20 minutes, stirring frequently, until thick and creamy.
  6. Remove from heat and stir in vanilla extract.
  7. Let rest for 5 minutes before serving. The pudding will thicken slightly as it cools.

Notes

  • Use brewed espresso instead of instant coffee by replacing 1/2 cup of milk with strong coffee.
  • Add cardamom or nutmeg for extra warmth.
  • Stir in a tablespoon of butter for added richness.
